From Lima to the Farm
Juan was born in Peru and moved to the United States at the age of fifteen. He brought with him a deep appreciation for food, culture, and the traditions that shaped his childhood. Growing up in Lima, his family traveled across the country, tasting regional dishes and learning from the diverse cultures that make Peru so vibrant.
Summers were spent far from the city, on his grandparents’ farm in the south. Mornings began with the scent of fresh earth and the sound of roosters. Milking cows, tending vineyards, and collecting firewood were part of daily life. It was simple, yet full of beauty. His grandparents, both gifted cooks, taught him that food is more than sustenance — it’s something to honor.
A World of Flavors
When Juan moved to the U.S., his culinary world expanded even further. Meals with new friends became windows into cultures and flavors he had never known. He began his restaurant career at Clyde’s in Reston, where he learned the foundations of hospitality and service.
From there, Juan joined the team of renowned chef José Andrés in Washington, D.C. Here, he discovered the artistry of creating dishes that bring joy to thousands. The chef’s dedication to ingredients reminded him of his grandparents: every dish has a history, and every ingredient deserves respect.
His path took him to Minneapolis, where he experienced French cuisine for the first time. Later, he moved to Atlanta, where he worked in a family-owned restaurant beloved by the community. Each stop along the way deepened his love for hospitality.
Finding Home at Bastille
Eventually, Juan returned to Northern Virginia, eager to be closer to family. A friend mentioned an opportunity at Bastille, and he immediately said yes. From the moment he met Chefs Christophe and Michelle, there was an instant connection — not just over food, but also over a shared passion for motorcycles.
After a busy Saturday night shift, he sat down at the bar to taste the Bouillabaisse. Captivated by its beauty and flavor, Juan knew he had found the place he was meant to be.
Two years later, Bastille is not just a workplace but a second home. Here, Juan has found a family that shares his passion — and a community where every guest is welcomed like one of their own. We aren't just a team; we're family.
“For me, this is more than a job,” Juan says. “It’s where I was always meant to be.”
